Why I Love This Recipe

I found this recipe when I was in Rainbow girls. I was hosting a Hawaiian Dinner. This recipe is a favorite of my family. It is very good with chicken.

Ingredients You'll Need

1 lb. boneless pork, cut into 1 inch cubes or chicken breast
1 Egg beaten
3 Tbsp. flour
½ tsp pepper
salt to taste
3 green pepper cut into 1/2-inch cubes
3 Tbsp. shortening
½ cup Pineapple chunks; drained but save juice
2 ½ Tbsp cornstarch
2 ½ Tbsp soy sauce
¼ cup white vinegar
½ cup pineapple juice
¼ cup sugar
White rice , cooked

Beat together-- egg flour, salt and pepper. Thoroughly cover cubes of pork in egg-flour batter. Brown on all sides in hot grease in frying pan--cover and cook 30 minutes. Boil green pepper 10 minutes in water and drain. Add green pepper and pineapple to meat. Mix in saucepan –cornstarch soy sauce, sugar, vinegar and cook until clear. Pour over meat mixture and simmer. Serves over rice.
