Why I Love This Recipe
Did you know that buttermilk is tangy and low in fat, making it a healthier option for marinating chicken?
Ingredients You'll Need
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup low-fat buttermilk, divided
1 cup whole grain panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup whole wheat flour
2 large eggs, beaten
Cooking spray for baking
Directions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
In a shallow bowl, pour in 1/2 cup of the low-fat buttermilk. In another shallow bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
Dredge the chicken pieces in the flour, shaking off any excess. Dip the floured chicken into the remaining 1/2 cup of buttermilk, then coat with the breadcrumb mixture, pressing gently to adhere.
Arrange the coated chicken bites on the prepared baking sheet, spacing them apart. Lightly spray with cooking spray.
Bake for 15-20 minutes, or until the chicken is golden brown and cooked through, with an internal temperature of 165°F (74°C).
Serve hot, with your favorite dipping sauces or as part of a main dish. Enjoy!
