Ingredients You'll Need
2 tortillas-your flavor choice
1 cup spinach or lettuce
4 Tablespoons Roasted Red Pepper Hummus (or your favorite hummus)
1 (15 ounce) can black beans, rinsed and drained
1/2 avocado, diced
VARIATION: Substitute meat of your choice for the hummus or simply add it in
Lay out your two tortillas and spread 2 Tablespoons of hummus on each one.
Layer spinach on top of hummus.
Add 1/4 cup black beans on top of spinach.
Top with diced avocado.
Fold in edges of the tortilla and roll it up.
Cut in half and serve.
