Hearty Fish Casserole

Why I Love This Recipe
Ingredients You'll Need
Layer #1
6 med. size potatoes, peeled and boiled soft (approx. 2&1/2 cups mashed)
MASH & ADD
1/4 cup becel butter
1/4 tsp. salt
1/4 tsp. black pepper
1 tsp. sugar(or splenda)
1/4 cup skim milk
Mix all together and place at bottom of deep casserole dish.
Layer #2
Make dressing:
5-6 slices white bread (or whole wheat)crumbled small
Mix in 1 tsp. crushed dry savory
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. onion powder
Melt 2 tbsp. becel butter
Pour over crumb mixture and mix through with hands.
Spread over top of mashed potatoes in casserole.
Layer #3
Place 3-4 boneless fish fillets over top of dressing

Pour white sauce over top of fish layer.
Make White Sauce as follows:
Melt 1/4 cup becel butter in saucepan over med. heat.
Add 2 tbsp. white flour and whisk until mixed together.
Pour in 1 cup skim milk gradually and whisk all the while.
Add 1/4 tap. salt
1 tsp. sugar (or splenda)
Whisk for 1 minute and remove from heat. If too thick add a few tsp. of water to thin.
POUR over top of fish in casserole.
BAKE IN 400 degree F. oven uncovered for 30 mins.
Layer #5
Grate 1/2 cup cheddar cheese and sprinkle over top and place casserole back in oven foe 8-10 mins. for cheese to melt.
Let cool out of oven for few mins. before serving so cheese may set.
This is a recipe that my neighbour made for our night at the cabin. It was a cold winter evening and we all ski-doo into the cabin for a Saturday night get-together with our family and friends. Elaine made this really good dish and we all had to have the recipe. Love those winter nights! at the cabin!
