Heavenly Mixed Greens with Fruit

Jicama is sometimes called Mexican potato, this root vegetable has a mildly sweet, elusive flavor, and a crisp, moist texture. It looks something like a cross between a potato and a turnip, with a thin brown skin, a round, turnip-like form and tail, and smooth white flesh. Most Supermarkets carry Jicama in the Produce section of the store.
Ingredients You'll Need
1 medium jicama, cut into 1/4-inch slices
6 oranges, peeled and sliced
6 kiwi fruit, peeled and sliced
8 cups bite-size pieces salad greens
Spicy Orange-Honey Dressing, (below)
1/2 cup dried cranberries
Spicy Orange-Honey Dressing:
1/2 cup orange juice
1/2 cup honey
1 teaspoon ground cinnamon
Directions
Cut jicama into star shapes using small star-shaped cookie cutter.
Stir together oranges, kiwifruit and jicama stars in serving bowl.
Combine dressing ingredients.
Mix well.
Toss with salad greens and Spicy Orange-Honey Dressing.
Top with cranberries.
