Hefty Vegetarian Soup (about $30, about 12 Servings)

Why I Love This Recipe
This recipe, which makes soup hefty enough to be a meal in itself, is actually the variation of a recipe I got from a co-worker, early on in my vegetarian transition. But non-vegetarians will also love this delicious soup, which is one of those dishes that smells wonderful every time you heat it up, is filling and delicious, and makes the kitchen smell really great. It can be a meal by itself!
Yum !! It's totally comfort food.
This is a double recipe. You can cut it exactly in half and it will come out great, but obviously it will make a lot less. This double recipe made about 14 bowls of soup (meal sized bowls, not cups).
Ingredients You'll Need
6 tbsp of vegetable oil
4 cups chopped celery (2 bunches)
4 cups chopped leeks (4 bunches)
4 cups chopped onions (4 onions)
2 cups chopped carrots (1 bag)
3 chopped potatoes
12 cups of water
Optional to sprinkle on top:
Powdered ginger
Lemon Pepper
Butter
Garlic Salt

YOU NEED

4 cups chopped celery (2 bunches)
4 cups chopped leeks (4 bunches)
4 cups chopped onions (4 onions)
2 cups chopped carrots (1 bag)

TO PREPARE

Simmer in a big (at least 2 gallon) pot with about 6 tbsp of vegetable oil:
4 cups chopped celery (2 bunches)
4 cups chopped leeks (4 bunches)
4 cups chopped onions (4 onions)
2 cups chopped carrots (1 bag)
3 chopped potatos
Chopped means, small chunks that will cook without taking an hour, 1-2 centimeters thick at most.
Simmer all of this, and keep stirring it, until it isn't hard anymore. It will shrink up a good bit.
Add:
12 cups of water
Bring to a boil, then turn heat to medium and stir for 15-20 minutes. This is a great time to call your sweetheart or your best friend.
Now, drag out the blender and a big bowl. You are going to blend the entire pot of soup.
Blend the entire pot of soup! Use the "puree" setting (but don't overdo it. It doesn't have to be blended on a molecular level). Pour the blended soup into a bowl.
Pour everything back into the big pot and simmer it for 15 more minutes. Good time for another phone call or for going crazy with text messages !
I serve it with a pat of butter, 1/4 tsp of ginger, 1 tbsp of lemon salt and 1 tsp of garlic salt. Salad spice with salt and pepper works well too. Without some kind of spice to help it, it can be a little plain, especially on the first day before all of the flavor has really developed.
