Why I Love This Recipe

Hemp hearts are rich in healthy fats, protein, and various minerals, making them a nutritious addition to these pancakes.


Ingredients You'll Need

1 cup all-purpose flour
2 tbsp hemp hearts
2 tbsp shredded coconut
2 tbsp chocolate chips
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1 large egg
2 tbsp unsalted butter, melted
1/2 tsp vanilla extract


Directions

In a large bowl, whisk together the flour, hemp hearts, shredded coconut, chocolate chips, sugar, baking powder, baking soda, and salt.


In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.


Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for 5 minutes.


Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.


Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.


Serve the pancakes warm with maple syrup and additional chocolate chips and coconut for garnish, if desired.

Fresh fruit salad with a dollop of Greek yogurt
