Why I Love This Recipe

I think this recipe came from the bottle of Dijon mustard, but I've been using it so long, I've added it to my cookbook.

This is also VERY good on a pork tenderloin roast. I make enough to coat the potatoes and the pork. In the bowl, I coat the potatoes first, and then I clean out the bowl and scrape it out by using the pork roast. Put the pork roast in the center of the pan and surround with the potatoes. I bake them together at about 350 for one hour.


Ingredients You'll Need

1/3 cup Dijon Mustard
2 Tbl. Olive oil
1 clove garlic finely minced
½ tsp. Italian seasoning
6 medium red skin potatoes cut into chunks


Directions

Mix all ingredients except potatoes in a bowl. Toss in potatoes to coat. Bake on a lightly greased 13 by 9 baking pan (or use Reynolds Release foil without greasing pan).


Bake 425 for 35 to 40 min. until potatoes are fork tender.
