Hillbilly Split Pea Soup

i never thought I would like pea soup, until I went to Pea Soup Andersons...it was yummy and I just had to make my version of their soup. After many tries this one is very close and Delicious!
Ingredients You'll Need
2 medium yellow onions, peeled and coarsely chopped
1/2 C. diced carrot
2 tablespoons bacon drippings, butter, or margarine
2 tablespoons of butter to go in the pot.
1 tablespoon sugar
1 ham hock or left over ham bone with some ham still on bone
1 pound yellow split peas, washed and sorted
1 C. milk
3 quarts water
Directions
Stir-fry onions in drippings 5 to 8 minutes in a large saucepan over moderate heat until pale golden. . Add remaining ingredients, cover, and simmer 1 hour, stirring occasionally. Be sure to rinse the peas and check for rocks. i like to take half of the soup and blend in a blender, so the soup is creamery. Add it back into the rest of the soup and take out the bone and give it to the dog.
