Ingredients You'll Need
1/2 cup cashews
1/2 cup almonds (soaked)
1/2 cup medjool dates (6 pitted)
1/2 cup shredded dried coconut
1 Tbsp nut butter
1 tsp mesquite powder
1/2 tsp cinnamon
1/4 tsp vanilla powder
1 Tbsp lemon zest
Juice from half the lemon
shredded coconut for coating
Directions
Blend all ingredients in your food processor until mixture will stick together when pressed firmly.
Add more lemon juice or water if needed.
Scoop and roll with your hands into a ball.
Roll the ball in shredded coconut to coat.
Store in fridge or freezer.
