Why I Love This Recipe
This is my all time favorite dressing- and meal! A Whitewater Cookbook all time favorite (if you do not own a copy of Whitewater cooks, you MUST get it). I've played around with the ingredients to suit my love of ginger.
Make a double quantity of salad, and dress only what you will eat, as I guarantee you will want more the next day!
Ingredients You'll Need
3 TBSP Soy Sauce
3 TBSP cider vinegar
3 TBSP water
1 TBSP maple syrup (start with 1, add more if you like)
1.5 TBSP size of fresh ginger (skin peeled but just throw the whole thing in)
1-2 cloves of fresh garlic (whole- throw em in!)
1.5 TBSP tahini (sesame seed paste)
1/3 cup nutritional yeast
1/3 cup olive oil
The Bowl
4 cups cooked brown rice
1 cup beets, grated
1 cup carrots, grated
1 cup almonds, toasted
Chopped mint or cilantro
2 cups spinach leaves
1 package firm tofu cut into 1/2-inch cubes
Feta cheese
Peaches if you have them!
Directions
Place all ingredients in a magic bullet, blender, or food processor. No need to chop, it does it all for you! Blend for at least 1 min, or until smooth in consistency.
