Homemade Chicken Soup/Chicken Broth

Ingredients You'll Need
1 Whole Chicken, Cut into parts
Water To Cover
2 Carrots, Chopped
1 Onion, Chopped
1 Handful Fresh Dill & Handful Fresh Parsley
5-6 Peppercorns
Directions
*Wash chicken and place in large pot; cover with water and bring to a boil (gross gray stuff will come to the top, skim this off with slotted spoon – as much as you can as it makes the soup taste better)
*Once all scummy stuff is off the top, add rest of ingredients
*Return to a boil, then lower to a simmer for 1 ½ to 2 hours
*Remove the chicken and set aside
*Using fine mesh strainer, strain the stock into another bowl to use later – save the carrots and remove rest of ingredients left in strainer
*Remove chicken from bone (it should just fall off), cut into cubes and add carrots (and any other ingredients you want in soup), cover with some of the stock you saved and serve.
Recipe Tips
*Pour remaining stock into mason jars and allow to cool, then cover and refrigerate and you have fresh chicken broth to use
