Why I Love This Recipe

Chimichurri is a traditional Argentinean sauce and is often served with grilled meats, particularly as part of an asado, the Argentine barbecue.


Ingredients You'll Need

1/4 cup honey
1/4 cup red wine vinegar
1 cup mixed fresh herbs (parsley, cilantro, and oregano, roughly chopped)
4 garlic cloves, minced
1/2 teaspoon red pepper flakes (or to taste)
1/3 cup olive oil
Salt and pepper to taste


Directions

1. In a medium mixing bowl, combine honey and red wine vinegar. Whisk until fully blended.


2. Add the mixed and chopped fresh herbs into the bowl.


3. Stir in the minced garlic, red pepper flakes, and a pinch of salt and pepper.


4. Gradually whisk in olive oil in a slow stream to emulsify the mixture slightly.


5. Taste the chimichurri and adjust seasoning with more salt, pepper, or red pepper flakes as desired.


6. Let the chimichurri sit for at least 30 minutes at room temperature to meld the flavors.


7. Use as a topping for grilled vegetables, meats, or as a flavorful dip.


Pairs Well With

Pairs well with an Argentine Malbec or a refreshing sparkling water with a splash of lime
