Ingredients You'll Need

2 cups all-purpose flour
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs, at room temperature
1 3/4 cups milk
1/4 cup honey, plus extra for drizzling
2 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
1/2 cup mini chocolate chips
Cooking spray or additional butter for griddle
For Banana Cream Swirl:
2 ripe bananas
1/2 cup heavy cream
2 tablespoons honey
1/4 teaspoon cinnamon


Directions

1. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.


2. In another bowl, beat eggs, milk, 1/4 cup honey, melted butter, and vanilla extract until well combined.


3. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the mini chocolate chips. Let the batter rest for 5 minutes.


4. While the batter rests, prepare the Banana Cream Swirl. In a blender, combine bananas, heavy cream, 2 tablespoons honey, and cinnamon. Blend until smooth and creamy. Transfer to a squeeze bottle or piping bag.


5. Heat a non-stick griddle or large skillet over medium heat. Lightly grease with cooking spray or butter.


6. For each pancake, pour about 1/4 cup of batter onto the griddle. Cook until bubbles form on the surface (about 2-3 minutes).


7. Just before flipping, squeeze a spiral of Banana Cream Swirl onto the pancake. Flip and cook for another 1-2 minutes until golden brown.


8. Repeat with remaining batter, adjusting heat as necessary to prevent burning.


9. To serve, stack 3-4 pancakes per plate. Drizzle with extra honey and any remaining Banana Cream Swirl.


10. Store any leftover pancakes in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster or microwave before serving.


Pairs Well With

Chilled Chocolate-Dipped Banana Milk: Blend cold milk with a frozen banana and a dash of cocoa. Serve in chocolate-rimmed glasses for a delightful twist!
