Honey Lemon Rotisserie (or Roast) Chicken

"Rotisserie Chicken glazed with lemon and honey."

Serves 4-6 | Prep Time 10-15 minutes | Cook Time 1 hour and 15-30 minutes rotisserie or roasting time

Why I Love This Recipe

Honey lemon and rosemary are just so good with chicken. We particularly enjoy this combination of flavors.


Ingredients You'll Need

4-6 lb. whole chicken
1/2 c. lemon juice (2 lemons)
1/4 c. olive oil
1 clove minced garlic
1 t. sea salt
1 T. honey
sprigs of rosemary or herbs of choice


Directions

Soak chicken in salted, cold water for an hour or longer ; pat dry. Preheat grill or oven to 500 F. Brush chicken with olive oil, place rosemary sprigs in cavity, and place on spit to rotisserie or in foil pan to roast in oven or on grill. Meanwhile, make glaze by whisking the lemon juice, 1/4 c. olive oil, garlic, salt, and 1 T. fresh rosemary, chopped together. until chicken is crispy and golden brown. When done, After 30 minutes start brushing chicken with glaze every 15 minutes until chicken is done. Let chicken rest 10 minutes before carving to serve.
