Ingredients You'll Need
1 x 4 - 7KG ham
375 x ML verjuice or apple cider
100 x ML of honey
1 x TSP of salt
Cracked pepper to taste
1 x TBSP of chopped rosemary
1 x TBSP of chopped sage
2 x Cloves of garlic, (crushed)
2 x Cloves, (crushed)
2 x Star anise, (crushed)
Skin of one lemon, (grated)
100 x ML of extra virgin olive oil
1 x Onion, (roughly chopped)
1 x Carrot, (roughly chopped)
1 x Stick of celery, (roughly chopped)
Directions
Preheat oven to 180°C
Place carrot, celery, and onion in a baking tray.
Remove the skin from the ham leaving a generous layer of fat. Mix spices, herbs, lemon and garlic with oil to form a paste.
Cut some incisions into the ham with a sharp knife.
Rub ham with the paste generously and place on a the baking tray.
Add 3 cups of water to the tray.
Place the tray into the hot oven and keep at 180° for the first 30 minutes then reduce heat to 160°C and cover the ham with foil. Cook for 1 hour, checking from time to time and basting.
*SIDE NOTE*
If juices in the tray dry just add a little more water!!
Meanwhile, combine honey and verjuice/apple cider in a saucepan and bring to the boil. Reduce for 5 minutes.
When the ham is cooked remove it from the oven and uncover. Rest for 20 minutes. Baste with some of the verjuice/apple cider honey mixture and place back in the hot oven to form a glaze. After 5 minutes baste again and repeat a couple more times.
