Why I Love This Recipe

My best friend gave me this super-easy recipe. It's pretty and delicious.


Ingredients You'll Need

1 package of cream cheese
1 tablespoon of olive oil
8 oz frozen spinach
1 can or bottle of artichoke hearts
pinch or two of salt, pepper, red pepper flakes, onion flakes, and garlic powder to taste.
1/2 cup grated or pre-packaged parmesan cheese
1/4 c. fine bread crumbs
1/4 c. parmesan cheese
garlic powder


Directions

Warm (in microwave) 1 package of cream cheese with a tablespoon of olive oil if you have it (okay to omit olive oil) -- in a nice glass or ceramic oven-safe bowl.


Add 8 oz frozen spinach that has been thawed and mostly drained. Stir.


Add 1 can or bottle of artichoke hearts, mostly drained and chopped fine (I whiz mine in the food processor if they are too big in the bottle).


Add a pinch or two of salt, pepper, red pepper flakes, onion flakes, and garlic powder to taste.


Add 1/2 cup grated or pre-packaged parmesan cheese and stir everything together.


On top of this, sprinkle a mixture of 1/4 c. fine bread crumbs, 1/4 c. parmesan cheese and a little more garlic powder. Heat up in a low oven (300 or so) until the cheese is melted and it's a little brown.


Serve with french bread, pita, triscuits, or other crackers or bread as desired. Yum!
