Ingredients You'll Need

1.5 lb boneless chicken thighs
2 tbsp olive oil
2 tsp ground cumin
1 tsp smoked paprika
1 tsp turmeric
1 tsp garlic powder
½ tsp cinnamon
Salt & pepper to taste

1 cup basmati rice
2 cups chicken broth
***For the Pickled Veggies***
½ cucumber, thinly sliced
½ red onion, thinly sliced
½ cup white vinegar
1 tsp sugar
½ tsp salt
***For the Tahini Sauce***
¼ cup tahini
2 tbsp lemon juice
1 garlic clove, minced
2–3 tbsp water
Salt to taste
***For Garnish***
2 tbsp chopped parsley
1 tsp sumac
Pita chips


Directions

***Prepare the Pickled Veggies***


In a bowl, combine white vinegar, sugar, and salt.


Add the sliced cucumber and red onion.


Let the mixture sit for 20 minutes to pickle.


***Marinate the Chicken***


Mix olive oil, ground cumin, smoked paprika, turmeric, garlic powder, cinnamon, salt, and pepper.


Coat the chicken thighs with the marinade.


Allow the chicken to marinate for 15 minutes.


***Cook the Rice***


Rinse the basmati rice thoroughly.


Cook the rice in chicken broth according to package instructions (approximately 15 minutes).


***Cook the Chicken***


Heat a skillet over medium-high heat.


Cook the marinated chicken thighs for 5–6 minutes per side until golden brown and cooked through.


Slice the cooked chicken thinly.
