Hudson Chicken

Why I Love This Recipe
When I was typing up all of my mother's old recipes, I happened to come across this one. The handwriting was so smudged I could barely make out the name of the recipe. It looked like "Hudson" (which is a city near our hometown) so it is now Hudson chicken.
Ingredients You'll Need
12 boneless, skinless chicken breasts, flattened
2 cups bread crumbs
1 cup parmesan cheese
¼ cup minced onion
1 teaspoon salt
1 teaspoon pepper
1 cup melted butter
Chopped fresh parsley (optional)
Directions
Combine crumbs, cheese, onion, salt, and pepper.
Dip chicken in butter – dredged in crumb mixture.
Roll up chicken breast and stick with toothpick.
Place in shallow baking pan.
Dribble remaining butter over breasts.
Bake 350-degrees covered with foil for ½ hour.
Remove foil and bake for another ½ hour.
Garnish with parsley.
