Ingredients You'll Need
1 lb. ground beef
1 small onion, chopped
2 tsp. salt
1/8 tsp. pepper
2 cups cooked rice
1 can (8 oz.) whole kernel corn
1 cup canned tomatoes
Combine ground beef, onion, salt and pepper in a skillet. Cook, stirring to break up meat, until the meat is browned. Drain off the excess drippings. Add the rice and corn.
Drain the liquid from the tomatoes and reserve. Cut up the tomatoes. Measure the liquid and add enough tomato juice to make 1 cup. Stir into the rice mixture along with the tomatoes.
Cover and simmer over low heat for 30 minutes. Serves 6.
