Why I Love This Recipe

The Indigo Girls' hit song 'Closer to Fine' was partly inspired by a philosophy class, much like how this dessert blends different elements to create a harmonious whole.


Ingredients You'll Need

16 oz white chocolate, chopped (divided)
2 cups heavy cream (divided)
4 large eggs, separated
1/4 cup granulated sugar
1 tsp vanilla extract
1/4 tsp salt
2 cups mixed fresh berries (blueberries, blackberries, and raspberries)
1/4 cup powdered sugar
1 tbsp lemon juice
Edible indigo flowers for garnish (optional)


Directions

In a heatproof bowl, melt 12 oz of white chocolate with 1/2 cup heavy cream over a double boiler, stirring until smooth. Remove from heat and let cool to room temperature.


In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Set aside in the refrigerator.


In another bowl, beat egg yolks with sugar until pale and creamy.


Fold the cooled white chocolate mixture into the egg yolk mixture. Add vanilla extract and salt.


In a clean bowl, beat egg whites until stiff peaks form.


Gently fold the whipped cream into the white chocolate mixture, then carefully fold in the egg whites until just combined.


Pour the mousse into a 9-inch springform pan lined with parchment paper. Smooth the top and refrigerate for at least 4 hours or overnight.


For the berry topping, combine berries, powdered sugar, and lemon juice in a bowl. Let macerate for 30 minutes.


Before serving, melt the remaining 4 oz of white chocolate with 1/2 cup heavy cream. Let cool slightly.


Remove the cake from the springform pan and place on a serving platter.


Pour the white chocolate ganache over the cake, allowing it to drip down the sides.


Top with macerated berries and garnish with edible indigo flowers if desired.


Slice and serve chilled. Store any leftovers in an airtight container in the refrigerator for up to 3 days.

A refreshing Lavender Lemonade Spritzer, garnished with a sprig of fresh lavender, to complement the white chocolate and berry flavors.
