Ingredients You'll Need
4 cups dashi stock or water with dashi powder
3 tablespoons white miso paste
1/2 cup finely chopped rainbow carrots (purple, yellow, orange)
1/2 cup cubed silken tofu
1/2 cup cooked edamame
1 sheet nori, thinly sliced into small squares
2 green onions, finely sliced
1 teaspoon sesame seeds for garnish
Directions
Bring the dashi stock to a gentle simmer in a medium-sized pot over medium heat.
Dissolve the miso paste by placing it in a ladle or strainer, immersing it into the hot dashi, and stirring until smooth. Ensure it is thoroughly incorporated into the broth.
Add the rainbow carrots and allow to simmer for 3 minutes until slightly softened.
Gently add the cubed tofu and edamame, cooking for another 2 minutes to warm them through.
Remove the soup from heat and divide it into serving bowls.
Sprinkle the sliced nori, green onions, and sesame seeds over the soup as toppings.
Serve immediately while hot. Enjoy!
