Instant Drunken Choc Cherry Mousse

Why I Love This Recipe

Perhaps not suitable for anyone under the age 18 UK or 21 USA, but even if you do give it to someone below that age...I think they'll be ok haha!This is a mousse with an alcohol kick that you can indulge in pretty much straight away...no waiting neccessary...at the bottom of this recipe i have given you other alcohol options and non-alcoholic option as well!

PREP TIME: 15 Minutes

COOKING TIME: 20 Minutes (including cooling and folding)

EFFORT FACTOR: 7/10

CLEAN UP AFTER FACTOR: 7/10

SCRUMPTIOUS FACTOR: 8/10 it can be quite strong!


Ingredients You'll Need

150g mini marshmallows
50g soft butter
250g 70% (or more) cocoa dark chocolate
60ml cherry brandy
284ml double cream
1 teaspoon of vanilla essence or a generous drizzle

EQUIPMENT:
heavy based pan
wooden spoon or spatula
electric whisk pref, hand whisk will take a long time.
fairly large mixing bowl.
four medium glasses or whatever you have handy (baring in mind it is rich)


Directions

HOW:


-the marshmallows, butter and chocolate should be melted in the pan over a low heat.


-once you see it starting to merge add the cherry brandy, this stops the alcohol dissolving. mix occasionally.


-whilst this happens whisk the cream and vanilla essence until it is thick and fluffy and creates peaks.


-take the melted choc mix off the heat and leave to cool (the cooler the better).


-fold in the cream gently trying not to lose any of the air in the mix (if it goes flat you can use the whisk to fluff it up again)


THE FINALE:


-spoon or pour into the glasses, and serve as is or stick in the fridge to make it chilled...


Either way its incredibly tasty and would be an added joy to your parties...especially if the alcohol is running low and you have drunken alcohol guzzling friends like mine hehe!


NOTE:


If you don't like cherry try replacing it with apricot brandy, apple liqueur or even something like amaretto or irish cream (altho for this i would suggest adding it once the choc mix has merged and cooled a little to avoid


curdling)...they would all work just as well..


You can also avoid the alcohol and replace it with 60ml of boiled water and then remove the vanilla essence but add peppermint or strawberry flavoring in it's place.
