Irish Whiskey & Maple Glazed Roast Chicken

Roasted chicken is a family favorite, Irish whiskey just makes it better!
Ingredients You'll Need
Whole chicken for roasting
1 t. garlic salt
1 t. pepper
1 t. thyme
1 T. olive oil
1/2 c. pure maple syrup
3 T. Irish whiskey
Directions
Place chicken in a tub of salted ice water to brine for 2-4 hours. Drain chicken and pat dry. Mix together oil, garlic salt, pepper, and thyme. Loosen skin from breast and legs of chicken and using your fingers, spread the thyme mixture under skin, over meat. Place chicken in roasting pan and place pan in an oven preheated to 425 F with legs to back of oven. Roast 30 minutes. Meanwhile mix together Irish whiskey and maple syrup. Baste chicken with whiskey mixture every 10 minutes for 40 minutes or until chicken registers 165F on instant thermometer. Let chicken rest for 10 minutes before carving. While chicken is resting, strain chicken drippings into a saucepan with any remaining glaze. Bring to boil. Pour into sauce dish to serve with carved chicken.
