Why I Love This Recipe

Oatmeal cold? Yeah right…but maybe. Push past that mainstream oatmeal thinking to this next level twist on delicious oats. Oatmeal + yogurt + banana + coconut = delicious island oatmeal pudding. When these ingredients combine together a wonderful pudding texture emerges.

I used to make this oatmeal pudding for my son. He loved it! One day I took a bite and realized how good it was. Seriously, babies know the good life. Now it’s a regular breakfast or snack in our house.

This island oatmeal pudding is the perfect texture, smooth yet textured from the coconut. You get the creaminess from the yoghurt and the sweetness from the banana. The mouthfeel is off the charts when you make this fresh. It’s like the creamiest oatmeal pudding you’ve ever tasted.

This island oatmeal pudding is:

Coconutly sweet

This makes a delicious and nutritious breakfast or a sweet filling treat.
