Italian Baked Potatoes

Why I Love This Recipe
From Barb and Ray, a couple I met while camping. She made them in the coals...
Ingredients You'll Need
Medium sized baking potatoes - 1 per person
Olive oil
Italian seasoning
Butter
Capers
Red pepper flakes
Directions
Place the potato on a cutting board and lay the handle of a wooden spoon tightly against the bottom. This will act as a knife stop.
Slice the potato from the top down, stopping when you hit the wooden spoon.
Repeat all the way across the potato with slices at 1/3" intervals.
It will creat a 'hinged' potato.
Drizzle olive oil LIGHTLY between each slice.
Sprinkle Italian seasoning LIGHTLY between each slice.
Wrap in foil and bake in the oven @ 475 or on the grill over med. heat for about 45 minutes.(or till done)
Just before potatoes are done, melt (per Potato) 1T unsalted butter, 1 tsp of capers and a pinch of red pepper flakes.
Unwrap potato, roll foil downward to make a dish - spoon caper sauce over potato and serve.
