Italian Grilled Panini Sandwiches

Why I Love This Recipe
I got a panini maker for a Christmas gift a couple years ago. I love using it and find I use it more that I thought I might! This is our newest fave!!
Ingredients You'll Need
8 slices whole wheat bread
1/4 c. pesto
8 thin slices Mozzarella cheese
1 tomato, thinly sliced
8 thin slices Provolone cheese
2 egg, beaten
1/3 c. milk
1/8 tsp. white pepper
1 Tb. flour
3 Tb. cornmeal
2 Tb. grated Parmesan cheese
Directions
Preheat dual contact grill, waffle maker or panini maker. Spread one side of each slice of bread with pesto. Make sandwiches, enclosing a thin slice of tomato between two slice of cheese, on mozzarella and one provolone.
On shallow plate, beat eggs w/ milk & pepper.
On another plate, combine flour, cornmeal and Parmesan cheese. Dip sandwiches into egg mixture, then dip into flour mixture.
Cook for 4 minutes on grill until crisp and golden.
Kay suggests that you use a good bakery wheat bread or homemade. The bread you usually buy in the grocery store is NOT a good kind of bread to use for this. It's just way too soft, thin and it ends up extra, extra flat!! I am anxious to give this a try on some dark pumpernickle rye and even on some good French of Italian bread. It's a nice change from regular run-of-the-mill grilled cheese. And I loved the pesto on this!!
