Why I Love This Recipe

FEATURING: Lettuce, cucumber, tomato, green (or red) pepper, pattypan or zucchini (optional), and basil. Garlic scape (or garlic) is optional.

A basic yet lovely easy salad that you can make in a pinch!

Ingredients You'll Need

4-6 cups lettuce - chopped, washed and dried
¼ cup chopped green onions
1 cucumber, chopped
1 sweet pepper (ex: green bell pepper), sliced into rings or smaller pieces
1 tomato, core removed and diced
1/2 to 1 pattypan squash, chopped (optional)
¼ cup sunflower oil (or grapeseed oil)
2 tablespoons chopped fresh basil, or more, to taste
¼ cup balsamic vinegar
2 tablespoons lemon juice
salt and pepper to taste
1 garlic scape (or 1 garlic clove, peeled), minced (optional)


In a large bowl, combine the lettuce, cucumber, sweet pepper and tomatoes.
MAKE THE DRESSING: In a mason jar, whisk together the oil, basil, vinegar, lemon juice and salt and pepper. If using, add garlic scape (or clove). Pour over salad, toss and serve immediately.

**** NOTE: If not eating right away, keep the dressing aside until serving.
