Italian Meatloaf with Pepperoncini and/or Giardiniera Michelle Losey's Style

"Meatloaf fashioned after Italian beef sandwich"

Ingredients You'll Need
3 Lbs Ground beef
5-7 pepperoncini peppers chopped small
1 - 2 yellow cooking onion rough chopped
About 1 - 1 1/2 cups Red, green or orange peppers can use frozen tri- colored peppers rough chopped
Opt: Abt 1 cup Giardiniera small chopped. (if using: use less peppers and pepperoncini)
Garlic powder
Opt: 1/2 tsp oregano
about 3 splashes of liquid or can use some dry zesty Italian salad dressing
about 2 splashes worcestershire sauce
3 tsp granular beef bullion
couple shakes of pepper
Opt: 1-3 eggs
Regular seasoned bread crumbs (not Italian seasoned)
*NOTE: Make sure to cut veggies in small pieces and don't add too many veggies or the meatloaf will fall apart!
Directions
Mix all ingredients together don't overwork it. Shape it in meatloaf shape in roaster or 13x 9 glass baking pan leaving room on all sides.
Add a lil water cover and bake about 1 hour then uncover and bake 'til done (add more water if pan gets dry while baking)
