Why I Love This Recipe

My mom has been making these for a year or two now and I really like them (I like them more than regular pancakes). They are really thin and are similar to regular pancakes, but not really the same thing. They are healthier than regular pancakes and they don’t have any flour involved. Also, they taste like bananas a little.

Ingredients You'll Need

Chemistry Info: there are pure substances and mixtures. First, the batter mixed and the mashed banana are both homogenous mixtures. A pure substance is the optional sugar and water in the vanilla extract is a pure substance. The banana being mashed and the ingredients mixed are both physical changes. The color of the pancakes changing and the smell are both chemical changes. Nutrition Information (1 serving of 4 small pancakes): 245 calories, sodium 150 mg, protein 12 g, sugars 16 g, total carbs 27 g, total fat 5 g.


Directions

1. Mash one whole banana and lightly beat with an egg.


2. For extra flavor, add coconut chips, vanilla extract (just a dash) and cinnamon.


3. Pour this mixture into a frying pan and cook as you would a regular pancake.


4. Take care to not burn the edges flipping when browned on either side.
