Why I Love This Recipe
This recipe takes a twist on a classic American dish, making for a tasty lunch or dinner!
Ingredients You'll Need
½ tablespoons olive oil
½ cup minced onion
½ cup fresh or frozen and defrost corn
2 cups sour cream
1 cup mini elbow or mini rigatoni noodles
¾ cup shredded cheddar cheese
6 cups water
Directions
In a pan, sauté the onions in the olive oil. Then add the corn, and cook until soft. Remove from burner.
In a pot, boil the water, then add the noodles. Cook on medium heat until soft. Remove from burner and strain the noodles.
In the same pot, melt the cheese, then add the strained noodles and the onions and corn. Mix well, until everything is coated in cheese.
Transfer into a serving bowl, then serve. Enjoy!
