Jalapeño Chiles en Escabeche

Ingredients You'll Need
10 jalapeño chiles cut in slices
1 large onion cut in wedges
8 garlic cloves minced
1 large carrot sliced
one red bell pepper cut in squares
dash of olive oil
1/2 cup white vinegar
1/2 cup water
pinch of oregano
4 bay leaves
salt and pepper to taste
Directions
In large pan saute jalapeños, onion, garlic, carrots, bell pepper in oil.
Add vinegar, water, oregano , bay leaves, salt and pepper and bring to boil then cover immediately and remove from stove and set aside to cool.
Remove bay leaves.
