Jalapeno Bacon Wrapped Shrimp

This is the claim to fame around the Lakeside Grill and it's all about the sauce on this one.
Ingredients You'll Need
1 Whole Jalapeño
6 Deveined Jumbo Gulf Shrimp
3 Slices Smoked Bacon
8oz Lakeside Burbon Glaze
6oz Garlic Brown Rice
1. Cut whole jalapeño in 6 strips long way
2. Cut 3 bacon slices in half and using dull edge of knife run down the bacon to lengthen it. Using one whole deveined shrimp, slice of jalapeño and 1/2 piece of bacon wrap shrimp and skewer with toothpick. Repeat process for all 6 shrimp.
3. Fry shrimp until the bacon is golden brown and add to warm bourbon glaze and coat generously.
4. Make a bed of rice and add coated shrimp on top of bed of rice for plating.
