Ingredients You'll Need

2 boneless chicken breasts
1 bag (5 oz.) baby spinach or mixed spring lettuce
1 c can black beans, rinsed (any brand)
1 c diced ripe mango
1/4 c diced red onion
1/2 c Paul Newman Olive Oil & Vinegar dressing
1 Tbsp. chopped fresh cilantro
Sea Salt & Freshly crushed Pepper to taste


Season chicken with sea salt and fresh crushed pepper on each side. Grill each side for 7 minutes or until thermometer reaches 160 degrees. Place in a platter and let it rest before slicing.

Rinse baby spinach or spring lettuce and dry. Place in a clean bowl.

Slice grilled chicken diagonally.

Layer the chicken strips, black beans, mango and red onion into a dish. Pour olive oil & vinegar dressing over the salad. Sprinkle cilantro on top.

Serve immediately.
