Jim's Broccoli Salad

Why I Love This Recipe
Featuring: Broccoli and garlic scapes (or garlic).
A quick and easy side dish salad that everyone loves in our household! You can easily double, triple or quadruple it too, in a pinch, if you're expecting more people than you thought!
Ingredients You'll Need
1 broccoli, cut in florets (you can also use the broccoli stem if it is still fresh and crispy)
1/2 Tbsp of sunflower oil
1 garlic scape (or 1 small garlic clove), chopped
1 cup of sunflower seeds
1 Tbsp of sesame oil
Salt to taste
Directions
Blanch the broccoli for a few minutes (2-3) until bright green. Strain. Run under cold water to cool it.
In pan, heat sunflower oil. When hot, add garlic scape (or garlic) and saute quickly until the garlic turns slightly brown. Add the sunflower seeds and saute for 30 seconds.
In a separate bowl, combine broccoli, garlic & sunflower seed mixture and drizzle sesame oil on top.
Serve as is!
