Joyce's spareribs in soy sauce

Why I Love This Recipe
This is a recipe of my former boss, a chinese lady. We had a deal for quite some time. I would trim the hedges of her garden three or four times a year and she would cook me dinner afterwards. One of my favourites were the spareribs she cooked in soy sauce. It was the beginning of a sharing friendship. Also the dish itself is wonderful to share with friends.
Ingredients You'll Need
Ingredients:
- 500 grams spareribs
- 4 slices of fresh ginger root
- 3 cups of water
- 1 tablespoon dry sherry or dry white wine
- 2 tablespoons Chinese vinegar or regular vinegar
- 3 tablespoons sugar (I use canesugar)
- 4 tablespoons Chinese soy sauce (Joyce and I use two tablespoons of sweet soy sauce and two tablespoons of salt soy sauce. But if you like the dish more sweet, just use the sweet soy sauce. Otherwise just use the salt soy sauce)
- 5 tablespoons water
- 1 teaspoon sesame oil
- 2 stalks of spring onion
Directions
1 Separate the different ribs and chop them in pieces of 5 centimeter long
2 Rinse them with cold water
3 Cook the water in a cooking pan and blanche the ribs for 1 minute.
4 Take the ribs out of the water and rinse again with water
5 Put the spareribs with the ginger, sherry, vinegar, sugar, soy sauce and the 5 tablespoons of water in a pan and simmer softly, occasionally stirring, until the ribs are done and the sauce has thickened into a sticky glaze. In about 20 minutes
6 Clean and chop the spring onion
7 Put the spareribs on a dish, pour the sesame oil over it and garnish with the chopped spring onion
Step1 till 4 can easily be done ahead. To make four servings, just double the quantities
