Why I Love This Recipe

Inspired by the heartbreaking story of Peanut and Fred, the beloved squirrel and raccoon in New York who were tragically taken from us by The New York Department of Environmental Conservation (DEC) . These soft, chewy cookies are filled with creamy peanut butter and sprinkled with a touch of sweetness for a tasty tribute to two unforgettable little heroes.


Ingredients You'll Need

1 cup peanut butter
1/2 cup sugar
1 egg
1 tsp vanilla extract
1/2 tsp baking soda
Pinch of salt


Directions

Preheat the oven to 350°F (175°C).


In a medium bowl, mix together the peanut butter, sugar, egg, vanilla extract, baking soda, and salt until well combined.


Roll the dough into small balls, approximately 1 inch in diameter, and place them on a baking sheet lined with parchment paper.


Use a fork to gently flatten each ball, creating a criss-cross pattern on the top.


Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.


Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.


Pairs Well With

A cold glass of milk or a warm cup of tea. For an alcoholic pairing, try a nutty liqueur like Frangelico.
