Ingredients You'll Need
1½ pounds spicy Italian sausage (or be healthy and do ground turkey sausage like they called for)
6 carrots, quartered and chopped
2 red bell peppers, seeded and chopped
2 medium zucchini, quartered and chopped
2 teaspoons sea salt
2 teaspoons freshly ground black pepper, or to taste
1 bunch kale, torn or chopped into bite-size pieces
HERBY PARMESAN POLENTA
1 cup polenta (corn grits)
1 tablespoon herbes de Provence
1 teaspoon sea salt
Butter or ghee, as needed
¼ cup shredded Parmesan, plus more as needed
1. MAKE THE SAUSAGE AND VEGGIES: In a large saucepan over medium-high heat, cook the sausage, browning it on all sides. Add the carrots and cook, 5 to 7 minutes, then add the bell peppers and zucchini. Season with the sea salt and pepper. Add the kale and cook until wilted, about 3 minutes.
2. MAKE THE HERBY PARMESAN POLENTA: Meanwhile, bring 4½ cups of water to a boil in a saucepan with a lid. Add the polenta, herbes de Provence and salt, and cook until all the liquid is absorbed, 8 to 10 minutes. Add a few large pats of butter or ghee and the shredded Parmesan, and stir in until melted.
3. When the polenta is ready, serve in individual bowls topped with the sausage-vegetable mixture. Garnish with extra Parmesan, if desired.
