Why I Love This Recipe

A versatile recipe that kicks up regular cornbread a notch or a nacho!

Ingredients You'll Need

1 cup cornmeal
1/2 tablespoon baking powder
3/4 teaspoon salt
1 cup buttermilk
2 beaten eggs
1/2 cup melted butter
1 can of creamed corn (17 ounce)
1 cup grated cheese
1 chopped jalapeno (or mild canned green chilies)


Mix all ingredients except cheese and chilies

Pour half of mixture into un-greased 9x9 inch pan

Sprinkle grated cheese and chilies on top of mixture in pan

Pour remaining ingredients on top of cheese and chilies

Bake in 350 degree oven for 45 minutes

Pairs Well With

heart soup or chilli
