- 1/4 cup coconut flour
- 1/4 cup lupin flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon garlic powder (optional, for extra zing)
- 1/4 teaspoon xanthan gum (for elasticity)
- 1 1/2 cups shredded cheddar cheese
- 2 large eggs
- 2 tablespoons melted butter
- 1/4 cup sour cream or Greek yogurt (adds moisture and tang)
Directions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a medium bowl, sift together the coconut flour, lupin flour, baking powder, salt, garlic powder, and xanthan gum
Stir in the shredded cheddar cheese to the flour mixture until evenly distributed
In a small separate bowl, whisk together the eggs, melted butter, and sour cream (make sure the butter is slightly cooled to avoid scrambling the eggs!)
Slowly pour the wet mixture into the dry mixture, stirring gently until everything comes together into a sticky dough. If it feels too dry, add 1-2 teaspoons of water or almond milk.
Let the dough rest for 5 minutes to let the flours and xanthan gum absorb moisture.
Using damp hands, form the dough into small rolls (about 2–3 tablespoons of dough each) and place them on the prepared baking sheet
Bake for 15-18 minutes, or until the rolls are lightly golden and firm to the touch
Let cool for 5 minutes before serving. Serve warm for melty, cheesy goodness.
