3/4 cup almond flour
3/4 cup flaxseed meal
1/4 cup unsweetened shredded coconut
1/4 cup chopped pecans or walnuts
1/4 cup dark chocolate chips (use sugar-free for keto)
2 tablespoons chia seeds
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsalted butter, softened
5 tablespoons granulated erythritol
1 large egg
3/4 teaspoon vanilla extract
1/4 cup sugar-free maple syrup or sugar-free honey substitute
Directions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine almond flour, flaxseed meal, unsweetened shredded coconut, chopped pecans or walnuts, dark chocolate chips, chia seeds, baking soda, and salt. Stir well to ensure even distribution.
In a separate bowl, cream together the softened unsalted butter and granulated erythritol using a hand mixer or stand mixer until the mixture is light and fluffy.
Beat in the egg, vanilla extract, and sugar-free maple syrup (or sugar-free honey substitute) until evenly combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie for spreading.
Flatten each cookie slightly with the back of a spoon or your fingers.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.
Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
Store the cookies in an airtight container at room temperature for up to a week, or freeze for longer storage.
