Keto Italian Sausage Zucchini Boats

Ingredients You'll Need
4 medium zucchini
2 Tbsp olive oil
Sea Salt (optional)
1/3 Cup diced onion
1 lb ground Italian pork sausage (turkey, chicken or beef work fine too)
2 cloves garlic
14.5 Oz diced tomatoes (drain)
1/3 Cup parmesan cheese
1 tsp Italian seasoning
1 Cup mozzarella cheese
Directions
Preheat oven to 400 and line baking sheet with foil or parchment paper
Slice zucchini length-wise and scoop out middle
Place on baking sheet cut facing up, drizzle with 1 Tbsp olive oil and sprinkle with salt if desired
Bake for 15-20 minutes, until soft
Saute onions in remaining olive oil until soft or translucent
Add garlic and cook a couple of minutes, until browning
Add pork to onions and garlic, cook until brown, approx 10 minutes
Stir in tomatoes, italian seasoning and salt to taste; remove from heat
Remove excess moisture from cooked zucchini with a paper towel
Fill boats with sausage mixture, topping with mozzarella
Bake 5-10 minutes, or until cheese is melted/browned as desired
