Directions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, use a hand mixer to cream together the softened butter and erythritol until smooth and fluffy.
Add the eggs one at a time, mixing on medium speed for about 1 minute after each addition.
Blend in the vanilla extract, ensuring it's evenly distributed throughout the mixture.
Add the baking soda and almond flour to the bowl. Mix on low speed until fully incorporated, forming a smooth dough.
