Killer Greek Salad and Dressing

Why I Love This Recipe
This recipe is inspired by Canmores Mountain Mercato's AMAZING greek salad. I had the pleasure of learning it from the Chef and owner. The key? GOOD FRESH LOCAL ingredients. Especially the tomatoes! Buy the sweetest, tastiest tomatoes you can find.... as well as the best feta, the freshest olives, sweet peppers, and fresh thyme and basil. If you have all these things, you will have a killer greek salad.
Ingredients You'll Need
1/2 pound Sweet garden tomatoes chopped roughly
(***note from my mom:)- never put tomatoes in the fridge, they lose all their flavour!)
1 medium Sweet onion
Red or orange sweet pepper chopped in chunks
green pepper in chunks
1/2 Long english cucumber
fresh deli olives (taste em and pick your favorite kind!)
High quality Feta cheese chopped in large chunks
Fresh basil (roughly chopped, or can leave as leaves)
freshly cracked ground pepper
sea salt
Dressing:
White sugar
good quality olive oil
white vinegar
1/2 lemon, juice
Directions
Combine chopped tomatoes and sweet onion in large salad bowl
drizzle with olive oil, 1 tbsp white vinegar, and 1 tsp sugar, 2 sprigs fresh thyme
allow to marinade in sugar dressing while chopping other veggies
chop and toss all other ingredients into bowl with tomatoes
drizzle with more olive oil and juice of lemon
add 10-15 turns fresh cracked pepper and 5-7 turns salt
toss all lightly and serve immediately!
