Ingredients You'll Need
.5 pound ground beef
1 cup kale (can also use any other greens you might have like spinach, romaine, arugula)
1 can kidney beans (this was my substitution for black beans)
Quinoa and whole grain rice
Shredded cheddar cheese
Minced garlic, chili powder and cumin powder to taste
Toppings: Diced tomatoes, sour cream and Chili Garlic Cholula sauce
Cook your rice and/or quinoa and brown the ground beef. Once the beef is brown, stir in kale, beans and seasonings until mixed and warm. Stir in shredded cheddar cheese until melted. Combine rice/quinoa with beef mixture and add toppings as desired. There are so many possible variations, including adding jalapenos, tortilla chips, corn, other cheeses/sauces! Make them your own way and enjoy!
