Kohlrabi & Apple Salad

Why I Love This Recipe
FEATURING: Kohlrabi (bulb & leaf), red onion (or green onion) and cilantro (optional).
An easy salad that is refreshing and crunchy and that everyone in our household loves! You can serve it on a bed of kohlrabi leaves or other leafy greens (optional).
Ingredients You'll Need
DRESSING
1/4 cup extra-virgin olive oil or sunflower oil (I put a bit less)
1 tablespoon apple cider vinegar
2 teaspoons honey (or sugar)
1 teaspoon dijon mustard
1/2 teaspoon sea salt
SALAD
1 large apple, cored and cut into thin matchsticks
1-2 medium kohlrabi, peeled and cut into thin matchsticks (don't worry if you don't peel it 100%, it will just add colour)
1/4 cup thinly sliced red onion (or green onion, chopped)
1/4 cup roasted (and salted if you want) nuts of your choice
Freshly ground black pepper
FOR SERVING
1-3 kohlrabi leaves, chopped into thin ribbons or any other leafy green of your choice such as kale, spinach, lettuce, etc. (optional)
1/4 cup finely chopped cilantro (or parsley), more for garnish
Directions
MAKE THE DRESSING: In a measuring cup (or jar), whisk together the oil, vinegar, honey, mustard, and salt.
MAKE THE SALAD: In a salad bowl, add the apple, kohlrabi, onion, hazelnuts, and cilantro. Add the amount of dressing that you want and toss to coat. Season to taste with salt and pepper.
SERVE: In each bowl, add a bit of chopped kohlrabi leaves (optional). Add the salad with the dressing. Garnish with additional cilantro (optional), and serve.
