Why I Love This Recipe

Did you know that the classic Rice Krispies Treats were invented by accident? In 1939, a Kellogg's employee stumbled upon the recipe while trying to find a way to sell more Kellogg's cereal. The original recipe called for melted butter and marshmallows, but this cheesecake version takes the beloved treat to a whole new level!

Ingredients You'll Need

8 oz cream cheese, softened
1/2 cup sugar
1/4 cup sour cream
1 tsp vanilla extract
2 eggs
3 cups Rice Krispies cereal
3 tbsp butter, divided
1 cup mini marshmallows, divided
1/4 tsp salt


Preheat oven to 325°F. Grease a 9-inch springform pan.

In a large bowl, beat the softened cream cheese with a hand mixer until light and fluffy. Gradually add in the sugar and beat until well combined. Add in the sour cream, vanilla extract, and eggs, one at a time, beating well after each addition.

In a separate bowl, melt 2 tbsp of the butter in the microwave. Add 1/2 cup of the mini marshmallows and stir until the marshmallows are melted and well combined with the butter. Fold in 2 cups of the Rice Krispies cereal until evenly coated.

Spread half of the Rice Krispies mixture into the prepared springform pan, pressing it down to form an even layer. Pour the cheesecake batter over the top, spreading it evenly.

In a small bowl, melt the remaining 1 tbsp of butter. Add the remaining 1 cup of Rice Krispies cereal and 1/2 cup of mini marshmallows, along with the salt. Stir until the marshmallows are melted and the mixture is well combined. Sprinkle this mixture over the top of the cheesecake batter.

Bake for 40-45 minutes, or until the center is almost set. Allow to cool completely on a wire rack before removing the springform ring.

Refrigerate for at least 2 hours before serving. Store any leftovers in the refrigerator.
