These lemon coconut energy balls are packed full of delicious flavor and are super healthy for you! I loved these when I was doing the Whole30 because they were about the sweetest thing I could have. They’re filled with dates, which are naturally sweet and delicious. Perfect for those who have a sweet tooth but are trying to eat healthier.
Ingredients You'll Need
1 cup pitted dates
2 lemons , juiced
1/4 cup raw almonds
1/4 cup macadamia nuts , cashews or walnuts work great too
1/2 cup shredded coconut , more if needed for rolling
1 Tablespoon chia seeds
Directions
Line baking sheet. Line a 9×13 pan with wax paper and set aside.
Blend ingredients together. Chop the nuts in a food processor or high powered blender. Remove the nuts, then add in 1/2 cup dates with the juice of 1 lemon and pulse. Add the remaining dates and juice from the 2nd lemon and pulse again. Then add in the chopped nuts, chia seeds and half of the shredded coconut and mix until combined.
Roll into balls. Roll into 1-inch balls (about 1 1/2 Tablespoons) and then roll into the remaining shredded coconut (may need more for rolling). Keep stored in the refrigerator.
