Ingredients You'll Need

2 lbs cooked ground meat (optional)
2 Tbsp olive oil (or drippings from ground meat, if using meat)
1 medium onion, minced
1 tsp pepper
1/2 tsp salt
2 cloves garlic, minced
2 cups beef stock or water
2 cans diced tomatoes, puree if desired
32 oz cooked beans (I used red beans)
2-6 Tbsp green chilies, pureed
2 Tbsp jalapenos, pureed
3 Tbsp tomato paste
1 Tbsp brown sugar
2 tsp unsweetened cocoa powder
1/4 tsp red pepper flakes
2 Tbsp chili powder
2 tsp cumin
1 tsp lime juice


Brown ground meat, save the drippings and set aside the meat

In a large pot saute the onion in oil or meat drippings. When translucent add garlic, salt & pepper and saute for several minutes.

Add stock or water, tomatoes, beans, chiles, and jalapenos to the pot; bring to a boil

Add tomato paste, brown sugar, cocoa, red pepper flakes, chili powder, cumin, and lime juice; bring back to a boil

Lower the temp and allow chili to simmer 10 minutes or until flavors blend well

Add meat and simmer for another 60 minutes. Adjust seasonings if necessary.
