Ingredients You'll Need

200-300g mixed chicken and pork mince
3 garlic cloves, chopped roughly
3 tablespoons chicken stock
A good pinch of salt
A pinch of white sugar
3 tablespoons lime juice
2-3 tablespoons roasted chili powder
3 tablespoons fish sauce
3-4 large red shallots, chopped roughly
A handful of chopped/ripped mint and coriander for finishing
1 handful of roasted rice
1 frozen pizza base
2 packets of grated mozzarella
1 packet of grated white cheddar
Olive oil
A squeeze of lime


Phase I - Laab:

1. Heat the stock in a large pan/wok, add the salt, sugar, garlic, and mixed mince. Cook for 3-4 minutes on fairly high heat, constantly mashing with a spatula to prevent lumps.

2. Once the mince is cooked, season with the chili, lime juice, and fish sauce. Cook for a couple of minutes, then remove from heat and add the shallots, mint, and coriander, reserving some for garnish. Stir.

Phase II - Pizza:

1. Put the pizza base on a baking tray and drizzle olive oil to cover the base.

2. Cover the base with a thin layer of grated mozzarella mixed with some white cheddar, then spoon on all the laab to cover the cheese.

3. Sprinkle another layer of mixed cheese on top of the laap to protect the herbs from burning and keep the meat moist.

4. Bake in a 200°C oven for 20-30 minutes until the cheese is melted and browning.

5. Remove from the oven, sprinkle on the roasted rice, more coriander and mint, and a squeeze of lime. Serve and enjoy! See more at
